1) KOREAN SESAME CUCUMBER SALAD

  (4 Servings)

3 cucumbers, sliced 1/8” thickness

1 small onion, thinly sliced

1 teaspoon salt

2 garlic cloves, finely minced

3 teaspoons sugar

3 tablespoons lemon juice

1 cayenne pepper, thinly sliced

1 tablespoon crushed roasted sesame seeds

½ tablespoon sesame oil OR olive oil

1. Use a food processor or a sharp knife to slice cucumbers and onion into 1/8” thickness. In a large bowl, sprinkle cucumber with salt. Toss well, and set aside for 15 minutes.

2. Drain cucumbers thoroughly. Discard all liquids. Add the onion, garlic, sugar, lemon juice, cayenne pepper, crushed sesame seeds, and sesame oil. Toss well, cover, and refrigerate 1 hour before serving.

TO SERVE:

Serve cold or at room temperature.

2) THAI COCONUT CHICKEN SOUP - Kai Tom Kha

(4 Servings)

1 1/2 cup water

1 cup coconut milk

½ pound chicken breast, diced

5 slices Galanga or ginger

2 tablespoons fish sauce or 3/4 teaspoon salt

1 fresh red chile pepper

2 Bergamot leaves or 1 teaspoon lime zest, finely shredded

1 tablespoon lemon juice

1 3-inch stalk lemongrass, smashed

GARNISH

1 scallion, thinly sliced

1 fresh red chile pepper, thinly sliced

1. Smash the lemongrass and cut it into 1-inch pieces.

2. In a medium saucepan, bring water to a boil. Add half of a cup of coconut, lemongrass, chicken, galanga and fish sauce. Simmer until chicken is cooked through, about 15 minutes.

3. Add the remaining coconut, the whole red chile pepper and bergamot leaves. Stir and immediately remove from the heat.

TO SERVE:

Serve with lemon juice and fish sauce to taste. Garnish with scallions and additional red chile pepper.

3) VIETNAMESE SALT AND PEPPER SHRIMP

(2 servings)

20 medium shrimp, unpeeled

2 teaspoons flour

½ teaspoon of salt

½ teaspoon of pepper

1 tablespoon of oil

3 garlic cloves, minced

1-inch piece ginger, peeled and thinly sliced

4 scallions, cut 1-inch pieces

1. Devein shrimp, using a sharp steak knife to cut through the shell. Do not remove shell. Marinate shrimp in a mixture of flour, salt and pepper.

2. Heat the oil in a nonstick frying pan until hot and stir-fry garlic, ginger until fragrant. Stir in shrimp and scallions and continue to cook, shaking frying pan occasionally, until shrimp are cooked through.

TO SERVE:

Transfer shrimp in a serving dish and sprinkle with ground black pepper.

Let's Clarify Cortisone

“Natural cortisone, an adrenocorticoid hormone produced in one’s body by the adrenal gland, is released at the onset of stress into the blood stream,” explains Dr. Grelsamer. “Injectable cortisone, on the other hand, is a synthetic steroid first used for rheumatoid arthritis, and developed as a derivative of natural cortisone by Edward C. Kendall and Philip S. Hench at the Mayo Clinic in Rochester, Minnesota in 1948. Steroid shots are injected into a specific area of inflammation to treat conditions such as severe knee problems, painful hips and backs, arthritis, tendonitis, bursitis, synovitis, tennis elbow and carpal tunnel syndrome.”

Are Steroids Safe?

“In What Your Doctor May NOT Tell You About Knee Pain and Surgery,” Warner Books 2002, and "What Your Doctor May NOT Tell You About Hip and Knee Replacement Surgery,” Warner Books 2004, Dr. Grelsamer says “There are downsides to steroid injections, however. They are not curative, and they can make the tissues less healthy and more prone to infection.

“The likelihood of developing one or more side effects depends on the dose of medication and on the length of time the medication is taken. There is therefore a limit to how many injections a physician can prescribe for a specific area. It is important to note that not all steroids are equivalent. The more expensive medications are stronger, last longer, and don’t leave a dandruff like residue in the joint.

“Injections provide short-term relief at best. Although pain relief usually lasts from a few days to a few weeks, some patients might experience freedom from pain for a few months. Newer forms of injectable medications may last longer, with fewer deleterious effects on the joint, but their benefits are not predictable, either.”

Nurture the relationship instead of fearing its demise. Sometimes marriage becomes more an act of preservation than of sharing, caring, communication and growth. This is due to one or both partners refusing to acknowledge something has changed or something is wrong (and pretending all is well) for fear that it will end the relationship. Change is inevitable in life and in relationships too. Embrace change, work with it and nurture those “new” aspects it brings to your relationship.

Listen to each other. Listening is the most important part of communication. It’s impossible to remain in a relationship where one partner does not listen to the other. “Listening,” means being attentive, processing the information and responding. It does not mean one partner must follow the other’s directions or wishes.

Learn from mistakes. ItÂ’s a fact. Everyone makes mistakes. In a relationship, itÂ’s important to acknowledge when you have made a mistake and learn from it.

Respect each other. Although you are married, you are still two different people. You may or may not have the same likes and dislikes and you each have faults and strengths. Learn to accept the good with the bad. Even more important, respect each otherÂ’s individuality and show respect toward one another.

Communication. Simply put, communication exists when partners listen to each other and there is open and honest discussion of feelings and thoughts. If you were in a work situation and you didnÂ’t understand something, you would probably ask questions. ItÂ’s the same in relationships. If you donÂ’t understand, ask questions. Providing positive feedback is also an aspect of communication and another way to nurture your relationship.

Sympathy. Being sympathetic shows your partner you care and you support him/her. YouÂ’ve put yourself in his/her shoes and can understand what he/she may be going through. The ability to sympathize with one another will help a great deal in weathering difficult times together.
