Sample Recipes from Substitute Yourself Skinny

Lots o’ Flavor Chicken Salad on Papaya Boat
Serves 4

Substituting nonfat vanilla yogurt for high-fat mayonnaise not only reduces the calories and fat, but also adds a delicious element of flavor to this salad favorite. Omitting cooking oil and poaching the chicken in water is healthy and nearly fat-free.

Nonstick cooking spray
2 papayas, halved and seeded
1 boneless, skinless chicken breast, chopped into 2-inch cubes
¼ cup water, or as needed
½ cup nonfat vanilla or plain yogurt
½ tablespoon honey
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 teaspoon fresh finely grated lemon zest
½ cup green seedless grapes, halved
¼ cup chopped celery

1. Spray a medium skillet with nonstick spray and heat on medium. Add the chicken and 2 tablespoons water. Cover and simmer for 5 minutes, adding water as needed to prevent burning. Cook the chicken until done, about 2 minutes longer. Remove from heat and set aside to cool.

2.  In medium mixing bowl, combine the yogurt, honey, salt, pepper, and lemon zest, and whisk until well combined. Toss with the grapes, celery, and chicken until well coated. Spoon equally into the papaya halves.

Skinny Secret
Part of feeling satisfied when eating includes tantalizing your taste buds with a variety of textures and flavors. In this recipe, the creaminess of the yogurt mixture soothes the palate while your other taste buds enjoy the crunch of fresh celery and the heartiness of the chicken.

Serving size: ½ papaya with ½ cup chicken

Rock ’n’ Roll Shrimp Risotto
Serves 4

Risotto sometimes gets a bad rap, but it’s usually because of all the cheese. Skip the cheese but maximize the flavor with fresh asparagus and lemon.

1 tablespoon olive oil
½ white or yellow onion, chopped
2 garlic cloves, chopped
Fine zest of 1 lemon
½ cup white wine such as sauvignon blanc
½ cup chopped asparagus tips
1½ cups arborio rice
5 cups low-sodium chicken broth, brought to a boil and simmering
½ pound cooked medium shrimp, peeled and deveined
Sea salt to taste
Black pepper to taste

1. In a large-quart boiler, heat the olive oil on medium. Add the onion, garlic, and lemon zest. Sauté until the onion is tender, about 4 minutes. Add the wine and asparagus tips. Cook about 1 minute. Add the rice and stir to brown, about 2 minutes. Add ½ cup of the hot chicken broth to the rice mixture. Cook, stirring frequently, until the moisture has been absorbed.
2. Continue adding the broth ½ cup at a time until all the broth has been added. Once all the broth has been added, cook until the rice is soft but still slightly al dente. Add the shrimp, season with salt and pepper, and serve in ¾ - cup portions.

Fudgy Chocolate Brownies
Makes 16 brownies

Coffee has a strong flavor that most people love, even in baked goods. Using it in this recipe is a perfect way to keep flavor high without adding any fat or calories. In addition, applesauce is naturally sweet and can be used to substitute for some or all of the sugar in recipes. Then, the egg whites help balance out the density of the
Applesauce, keeping your recipes lighter in texture.

Nonstick cooking spray
? cup unsweetened cocoa
? cup plain flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon sea salt
? cup granulated sugar
? cup water
1 teaspoon instant coffee
? cup applesauce
1 teaspoon vanilla extract
2 egg whites

1. Preheat oven to 350°F. Spray an 8-inch square baking dish with nonstick spray. In a mixing bowl, combine the cocoa, flour, baking powder, baking soda, salt, and sugar. Mix well.

2.  In a small-quart boiler, bring the water to a boil. Remove from heat and add the coffee; stir to dissolve. In a small bowl, combine the applesauce, vanilla, and egg whites. Mix well. Add the coffee mixture and mix well. Pour the liquid mixture into the dry mixture and mix well.

2. Pour the mixture into the prepared dish. Bake for 30 minutes or until a toothpick inserted comes out clean. Let cool for 10 minutes, then run a knife around the edges to loosen. When cooled completely, slice into 2-inch squares and serve.

Rural Health Information Exchange Goes Live with Orion Health™

Western Washington Rural Health Care Collaborative (WWRHCC), is now live with a web-based health information exchange (HIE) to facilitate electronic information sharing between three previously disparate, critical access hospitals and the Level I Trauma Center for Washington.

Western Washington Rural Health Care Collaborative (http://wwrhcc. org/) (WWRHCC), a non-profit rural health network, is now live with a web-based health information exchange (HIE) to facilitate electronic information sharing between three, expanding to nine, previously disparate, critical access hospitals and the Level I Trauma Center for Washington. The collaborative HIE, funded through a Health Resources and Services Administration (HRSA) and the Washington State Department of Health (http://www. doh. wa. gov/hsqa/ocrh/), Office of Community and Rural Health grant award, is supported by standards-based technology from Orion Health.

WWRHCC Executive Director Elizabeth Floersheim says the Collaborative wanted to take charge of health care quality and delivery in their own communities. Selecting Orion Health was the obvious choice, after reviewing several other products. Orion Health was able to provide technology to implement a world class, complete HIE infrastructure solution including messaging, clinical data repository, master patient index, and tele-pharmacy capabilities at the most competitive price.

"Without Orion Health's technology, this HIE would not be in existence today. The solution's low cost of ownership and specialized training options meant our own IT staff would be able to support and manage the project after the initial implementation. Rural organizations need solutions that meet constrained budget and personnel restraints and are easy to customize and implement," says Ms. Floersheim.

WWRHCC is comprised of nine federally designated critical access hospitals serving all or portions of nine Western Washington counties. Allowing these disparate hospitals to exchange patient information was critical in achieving their goal of reducing costs and improving quality of care through a sharing of resources across the region i. e. tele-Pharmacy. Additionally, the ability to provide real-time information when transferring a trauma patient to Seattle will decrease wait time and improve the continuity of care for rural patients.

In looking to implement an HIE, the collaborative faced challenges similar to many rural community healthcare organizations - restrictions on funding, IT personnel and opposing requirements. The HRSA-WA DOH grant award provided a conservative fixed budget, but required additional functionality for WWRHCC to adhere to. Orion Health was able to help WWRHCC meet functional, budgetary and resource challenges by providing a low-cost HIE solution that was capable of being managed by minimal internal resources.

Municipalities worldwide are adopting Wireless Sensor Network (WSN) technology to make their cities safer, healthier, greener, and more productive, according to a recent research study by ON World.

"WSN solutions for Smart Cities are being driven by increased spending on wireless broadband infrastructure, standards such as IEEE802.15.4 and ZigBee, increasing Green regulations, and the ongoing need for improved public safety," says Mareca Hatler, Director of Research.

Commercial WSN solutions for transportation, public safety, and municipal services are currently deployed in cities such as San Francisco, Oakland, Chicago, Los Angeles, and Songo, South Korea. From several recent surveys with 220 North American municipalities and public safety organizations, ON World found that cities are highly motivated to adopt WSN over the next 18-24 months for transportation, public safety, utility networks, and energy management.

A few of ON World's research findings are the following:

Public safety
Nearly two thirds (62%) of municipalities indicate that public safety is the major driver for adopting new technologies such as wireless broadband or WSN. With no suitable competing alternatives, personnel safety and locating is the most in-demand public safety WSN solution today.

Transportation

Thirty-five (35) percent of municipalities are highly interested in adopting a wireless traffic management system. Forty-on (41) percent are highly interested in wireless parking management Two-thirds of interviewees with >500,000 residents are highly interested in adopting wireless technologies for parking management.

Utility Networks

Nearly half of the surveyed municipalities indicate that they are planning to adopt an advanced automated meter reading within the next 18 months. Of those with AMR plans, 35 percent plan to adopt Wireless Sensor Network solutions that will enable them to implement load management, outage management, and other advanced services that are not possible with existing AMR systems.

Evidence that the Wireless Smart City trend is underway includes the following:

A number of WSN startups such as ACME Innovations, Sensys Systems, Streetline Networks, Spark Parking, and VehicleSense are providing mesh wireless sensor network systems and services for traffic monitoring and parking management. Moteiv, in partnership with UC Berkeley, Harvard, CITRIS, and the Chicago Fire Department, has developed a mobile WSN system for firefighter safety. In April, the Ministry of Information and Communication of Korea announced that it had selected the Incheon Free Economic Zone as a test-bed for the introduction of a city of ubiquity, or 'u-City.' The u-City will be an advanced digital city that will showcase the benefits of a modern networked city using technologies such as RFID and WSN. South Korea plans to spend $25 billion on the u-City over the next seven years. Wireless broadband adoption has picked up momentum with hundreds of cities worldwide planning or deploying wireless high speed IP based networks. These high bandwidth, low cost broadband networks give municipal workers and residents mobile access to data services such as WSN.

Belleville, Ill – Social Security Disability Insurance recipients can look forward to receiving a one-time $250 bonus payment by early summer, according to Allsup, which represents tens of thousands of people in the Social Security Disability Insurance (SSDI) process each year. The American Recovery and Reinvestment Act of 2009, recently signed by President Obama, launches a $787 billion national economic stimulus package that includes the one-time $250 payments to those eligible for SSDI, Social Security retirement, Supplemental Security Income (SSI), railroad retirement benefits and U. S. veterans disability compensation or pension benefits.

“This additional income, though minimal, can help offset the rising costs for people with disabilities,” said Paul Gada, personal financial planning director at Allsup. “Recipients may want to consider using it toward healthcare costs, especially if they are still in the 24-month waiting period to become eligible for Medicare benefits.”

The good news is even better for couples who receive Social Security benefits—because each recipient will receive a one-time $250 payment. “That means you’ll have an additional $500 in income available, which could be an important cushion,” said Mr. Gada. “For example, this amount could be put toward an emergency fund.”

SSDI is a federally mandated insurance program overseen by the Social Security Administration (SSA) that operates separately from the retirement and SSI programs. SSDI provides monthly benefits to individuals who are under full retirement age (age 65 or older) and who can no longer work because of a disability (injury, illness or condition) that is expected to last for at least 12 months or is terminal. More Details On The $250 Bonus Payments
To help clarify details about the $250 bonuses to SSDI recipients, Allsup has outlined answers to common questions about the one-time payment.

Who is eligible for the $250?
Anyone who was receiving SSDI benefits anytime during the three-month time period of Nov. 1, 2008, through Jan. 31, 2009 will receive a bonus check. In addition, beneficiaries in the Social Security retirement, SSI, railroad retirement and veterans benefits programs are eligible.

What if I got my SSDI in February 2009?
Unfortunately, you will not receive the one-time $250 payment because your entitlement date was after Jan. 31, 2009.

When does the payment go out?
The Social Security Administration expects everyone who is entitled to receive their payment by late May 2009.

If I’m eligible, how do I get the payment?
You do not need to do anything. There is no paperwork required. You will receive the additional payment automatically using the same method that you receive your regular benefits (i. e. direct deposit, mailed check).

Will I get more than one $250 payment?
Recipients are only entitled to one $250 bonus. It does not matter if you are on both SSDI, SSI or other benefit programs.

My children get dependent benefits, so will they also get a $250 bonus?
No, children under age 18 (19 if still in high school) who receive Social Security benefits will not receive a bonus. However, disabled adult children will receive a payment.

If my spouse and I are both on Social Security, do we only get one $250 payment?
No, each adult receiving Social Security benefits will receive a $250 payment. This means both you and your spouse will receive payments.

Will this payment affect my taxes?
No, the one-time $250 payment will not be counted toward gross income for your federal income tax.

What if I don’t get the payment?
If you don’t receive a payment by June 4, 2009, the SSA recommends contacting your local Social Security office or calling (800) 772-1213 to report that your payment did not arrive.

The $5,000 scholarship is awarded to one graduating senior per year by Lambda Alpha, the only national honorary society for anthropology. Of all the students nominated by the organization's 165 chapters, Ms. Bond was selected as the candidate who most strikingly embodied Lambda Alpha's ideals. According to Megan, the scholarship is awarded to the student who has made the most "distinguished achievement by reason of noteworthy contribution in the advancement of the study of anthropology." She was nominated by IUP's Department of Anthropology in January, and what was billed to her as a "long shot" has now become a very notable reality.

As this year's scholarship winner, Megan will also be afforded the opportunity to publish an article-length manuscript of her original work in Lambda Alpha's journal. Her study focused on the process of adjustment for students from Bangalore, India who came to study at IUP.

"I did the study with the Indian students at IUP for my class in ethnographic research methods with Dr. Chaiken last fall," Megan explains. "I became interested in that population when I realized that I was surrounded by Indian international students around my home at Copper Beech. I saw that they formed an enclave for themselves in this neighborhood and decided to investigate the changes they were in the process of undergoing. I had the opportunity to use the skills I was learning in class and apply them in the community, discovering that human life is truly interesting everywhere you look."

Megan attributes much of her success to the many advantages that were available to her as an RECHC student. "I think that I got the award because of my experiences made possible by the enhancement fund," she says. "I had many plans and goals but little resources, and the enhancement fund provided me with the opportunity to achieve what I have. It helped me begin what I want to do for the rest of my life."

Megan's plans have literally taken her across the world. Many students in the Honors College take advantage of the Robert E. Cook Enhancement Fund, a blessing for students who, like Megan, want to reach beyond the pages of their textbooks to gain real-world experience in their fields. During her years at IUP, she participated in an ethnographic field school in Peru, a study abroad program in Valladolid, Spain, and the Anthropological Study Odyssey to Belize and Guatemala.

"I have found that experiences abroad not only prepared me to live in an increasingly global world, but they have helped me grow personally, intellectually, and professionally. I have only been traveling and working abroad for two years, but in that short period of time I have been able to live in different cultures and understand and apply what I have learned in anthropology classes. I never would have imagined that I could move overseas for months at a time, not knowing anyone or even really comprehending the language that is spoken there, and live and learn in the ways that I have. Professionally, my international experience has led to accomplishments both here an abroad. I have been able to complete independent research projects and present at a national conference. These addition to my education definitely contributed to my future and helped ensure that I would be admitted into graduate school," Megan says.

While many other undergraduates were doing their research through Google Scholar, Megan was quite literally up to her elbows in world cultures. This kind of experience is precisely what made her a strong candidate for the National Lambda Alpha Charles Jenkins Scholarship and what will sustain her through her doctoral studies at Southern Methodist University in Dallas. She will be pursuing a Ph. D. in Cultural Anthropology with a concentration in Medical Anthropology starting this fall.

"I want to investigate the sociocultural, behavioral, economic, and political factors related to food, nutrition, and health, especially in Latin America. I am interested in Applied Anthropology (my undergraduate concentration), with which I can take what is learned about food, nutrition, and health and develop possible solutions in attempt to ameliorate problems related to health and nutrition. As part of my education at SMU, I was also given a research assistantship and a teaching assistantship. I want to continue research, develop programs that promote positive change, and teach at the university level to introduce students to anthropology and the worldview that I think goes along with it."

Megan's auspicious beginning suggests that Dallas will serve as her launching pad for many international and academic adventures to come.

Exhibition Industry Grows 3.2 Percent in 2007

The exhibition industry grew 3.2% in 2007, according to the fifth annual Center for Exhibition Industry Research (CEIR) Index report, which provides exhibition industry performance data for 11 key industry sectors. The 2007 industry growth rate was just below the 4.8% gain posted in 2006, but marked the fifth consecutive year of industry expansion and surpassed the 2.2% growth rate for real U. S. Gross Domestic Product (GDP) year-over-year. The gain in 2007 also drove a 2.5% CAGR (compound annual growth rate) increase from 2000-2007, the period covered by this report.

More than 300 events contributed data for this report, and the results show that the exhibition industry is healthy, vibrant and growing. As an objective measure of the annual performance of the exhibition industry, the CEIR Index measures year-over-year changes in four key metrics to determine overall performance: Net Square Feet; Attendees; Exhibitors; and Revenue.

Over the course of the period covered by this report (2000-2007), all four exhibition industry metrics rose on a CAGR basis: Net Square Feet (+3.1%); Revenue (+3.1%); Attendees (+2.0%); and Exhibitors (+1.5%). From 2006 to 2007, Revenue increased 6.8%, followed by 4.9%, 0.9% and 0.3% gains in Attendees, Exhibitors and Net Square Feet, respectively.

From 2006 to 2007, exhibition industry growth was led by the Government, Public and Nonprofit Services sector (+12.6%), while the Building, Construction, Home and Repair sector experienced a slight downturn. Several market sectors drove growth for the industry from 2000 to 2007, including Sports, Travel, Entertainment, Art and Consumer Services (+5.3% CAGR); Transportation (+5.0% CAGR); and Building, Construction, Home and Repair (+4.3% CAGR). Only the Consumer Goods and Retail Trade and Communications and Information Technology sectors decreased on a CAGR basis from 2000 to 2007. The attached chart shows the rankings of sectors from 2000 to 2007 and for 2006 versus 2007.

Veris Consulting, a leading exhibition industry research consultancy, collected the data from the more than 300 events and created the CEIR Index results. The Alfred P. Canadian Health Minister is putting pressure on Canadian physicians who co sign US prescription, in order for them to be filled through Canadian pharmacies.

It seems that the Canadian Government may have finally given in to US Pharmaceutical lobbying. Recently, Canadian Health Minister Ujjal Dosanjh stated that the government will crack down on the Canadian mail order pharmaceutical industry. This crackdown would devastate the industry and it would also shut the door on a service that many senior citizens have come to rely on to safely get the prescription drugs at prices they can afford.

The government plans on attacking Canadian doctors who issue prescription for US patients after reviewing their medical file, but without physically examining them. This is done in order to comply with Canadian health practices which state that a prescription can be filled only if reviewed by a Canadian doctor. Now, the government reasons that this system is unethical and unsafe and plans on amending the Canadian Food and Drug Act so that Canadian doctors can only issue a prescription if they have examined the patient personally. This essentially means that the US patients will have to come to Canada and visit a Canadian doctor in order to be able to pay the Canadian prices for the medications and there will be no place for mail order pharmacies.

However, is the problem really the ethics of the medical profession? Are Canadian doctors putting the health of their American patients at risk by giving them a second medical review? IsnÂ’t this a way to say that American doctors are unprofessional and negligent so as to put their patients at risk by giving them wrong prescriptions? If the minister believes this, why does the Canadian government send hundreds of Canadian patients to get treated in the United States?

And why is the pressure and mistrust of the medical profession coming only from the minister and not the medical associations of Canada? WouldnÂ’t these associations have the expertise to accurately assess the safety of the industry? Minister Dosanjh's portrayal of the process of a Canadian physician double checking the American prescription, as "unprofessional" and "unethical" demonstrates a fundamental misunderstanding of the benefit that the Canadian physician brings to the US patient. Their review of an existing U. S. prescription serves as a "double check" of the patient's medical profile and possible drug interactions as in confirmation with Canadian health standards. When a problem is discovered the two physicians often consult each other and often provide other alternatives to the patient.

The president of CIPA (Canadian International Pharmacy Association) Andy Troszok states: "The government and the colleges are condemning a process that actually saves lives, just to avoid liability exposure. It seems they have their priorities mixed up".

Moreover, after a Health Canada inspection of 11 Canadian mail order pharmacies conducted on November 16, 2004 (“Obligations of Pharmacists under the Food and Drugs Act and Food and Drug Regulations”), the issue of reviewing U. S prescriptions was never a problem. The only reference to that was a ban on “electronic or rubber-stamp signatures”, as the doctor’s signature has to be in hand.

Why such a dramatic change on behalf of Canadian government, who just a month ago, was telling the Canadian public not to worry about the internet pharmacy industry? Why shut down a one billion dollar growing industry that brought over 5,000 jobs on the market?

This sudden change of heart comes at a particularly beneficial time for US-Canada relations. The Minister’s statement appeared immediately following President Bush’s visit to Ottawa, where the internet pharmacy issue was discussed. Coincidently the “mad cow disease” question has been finally resolved in the benefit of Canadian agriculture as the US has finally opened its borders to Canadian beef. It seems that the Canadians traded the internet pharmacy industry for its beef industry. Moreover, Health Minister Mr. Dosanjh has stated himself that he has received a visit from a large pharmaceutical company and that “They have expressed their displeasure over the cross-border trade”. The minister declined to elaborate further on this meeting.

The Canadian government has decided to crack down on the most vulnerable sector of the internet pharmacy industry – Canadian doctors. However this issue is the least relevant one. We all know what is at stake here, and it is not the health of American citizens. The real concern is the billions of dollars pharmaceutical companies such as Merck and Pfizer are losing to small entrepreneurial Canadian pharmacies. And they are putting all of their efforts into lobbying Bush administration to end the importation of drugs from Canada. At the moment there are three pharmaceutical lobbyists to every Congressman in Washington.

However President Bush is no fool. This issue is politically dangerous for him to make a final decision on it. If Bush administration shuts down the re-importation of Canadian drugs, he will lose the support of the senior population.
